Friday night tales from the veggie kitchen!

“Mexican inspired pasta bake!”
Wholemeal pasta, black beans, organic yellow bell pepper, sweetcorn & green chilli in a Homemade vegan sauce of chopped tinned tomatoes, vegan cream, mixed herbs, garlic, Cajun spice & smoked paprika!

Wholemeal grilled flatbread with natural yogurt & hot sauce, serve with salad of chickpeas, diced red bell pepper, black olives & crunchy spinach leaves in a simple olive oil, squeezed lemon & cracked black pepper dressing … Eat like a kebab and have the rest of the salad on the side. Served with spinach, passion fruit & orange smoothie!

*I don’t really eat alot of “fake” meat, I guess because I don’t miss meat… but none the less this is a real comforter and hearty meal! Perfect for a Sunday! (these sausages were Linda McCartney)

*I don’t really eat alot of “fake” meat, I guess because I don’t miss meat… but none the less this is a real comforter and hearty meal! Perfect for a Sunday! (these sausages were Linda McCartney)

Warm beetroot & Spinach salad with fresh crunchy green bell pepper & scallions, Juicy vine tomatoes & fresh lettuce in a cracked black pepper, lemon juice & chilli olive oil dressing served with wholegrain multiseeded bap & hummus !!

*I hate wasting food, or letting it go off so I recycle salads & change ‘em up a bit if some recipes seem the same as previous, thats why :) Its just a way of making a super food dinner & changing it a bit for a super lunch the following day!

Red Kidney Beans, Sweetcorn & Mushroom Fajitas with all the delicious messy trimmings (Fresh handmade Guacamole, Sliced Yellow Bell peppers cooked in the fajita spices and oil, Cool sour cream, refreshing fresh lettuce, jalapenos, Mild cheddar cheese [or opt out if vegan, same goes for sour cream or replace with vegan sour cream] and always most important for me, a seriously hot, but still tasty hot sauce)
