Tonights Veggie Creation!
Aubergine, Corgette & Spinach Gratin in a homemade sauce of Passatta, green chilli, fresh basil, dried mixed herbs, garlic, cracked black pepper, grated mild cheddar, grated fresh parmasen cheese & creme freiche.
Layered into an ovenprooof dish (1 layer of vegetables covered with the sauce & repeat before grating parmasen onto the top layer)
Bake at gas mark 6 for 30 mins
Once done, pour over the remaining yummy sauce from your dish & serve with fresh salad of lettuce, skinned cucumber, juicy vine tomatoes & green olives all drizzled with fresh lemon juice & cracked black pepper.
