Mashed Potatoes with fresh garlic & Spring Onions (with olive oil and not butter) thinly sliced sautéed garlic mushrooms, Zangy Beetroot Salad & an Organic Lentil, Aduki Bean, Quinoa & Spinach Patty! (Health shop bought)
Just made Spinach, Banana, Strawberry and Orange Breakfast Smoothie. Two big handfuls of fresh spinach leaves, two small bananas, 5 Strawberries and enough OJ to cover (organic, smooth, not from concentrate OJ!) Blend until thick with no lumps and viola! The best bit is the orange juice absorbs the iron in the spinach too!!!

Spicy Creamy Vegan* Spelt Wholegrain Pasta and Red Kidney Beans packed with fresh spinach, olives, red chilli pepper, tasty herbs, cajun and chilli spices, green bell pepper with garlic bread on the side! Packs a tasty tummy filling punch… there might even be some left over for lunch at work the next day!

Olive Tofu cubed, butter beans, cherry tomatoes, scallions, skinned cucumber, roasted almonds, kalamata olives & rocket all tossed together simply in basil olive oil.

Super Foody Vegan Brekkie!
Warm beetroot & Spinach salad with fresh crunchy green bell pepper & scallions, Juicy vine tomatoes & fresh lettuce in a cracked black pepper, lemon juice & chilli olive oil dressing served with wholegrain multiseeded bap & hummus !!
*I hate wasting food, or letting it go off so I recycle salads & change ‘em up a bit if some recipes seem the same as previous, thats why :) Its just a way of making a super food dinner & changing it a bit for a super lunch the following day!
